Chef Philippe Moreno

Originally from Marseilles, Philippe Moreno trained alongside Gérald Passédat at the 3-Michelin-starred Petit Nice. A lover of seafood, he moved to Les Hortensias to explore the flavors of the Southwest, working closely with producers: fishermen, breeders, organic market gardeners. His fine, clear and inventive cuisine is an ode to the Basque-Landes terroir. Driven by the free and sensitive vision of chef Philippe Moreno, the cuisine at Les Hortensias du Lac pays homage to the products of the ocean, the market gardeners of the Southwest and the culinary heritage of the Landes region. A sincere, sunny experience rooted in life, served with a view of the lake.

The spectacular all-glass dining room extends the villa's original architecture and overlooks the marine lake. Inside, the windows open onto a wooded terrace with a chic guinguette ambiance. A rare and luminous setting, ideal for sunset dinners or summer lunches lulled by the sea spray.

A menu inspired by the ocean

Line-caught sea bass, octopus, imperial shrimp, root vegetables... Each plate tells the story of a coastal landscape. Iodine dominates, with subtle combinations and precise textures. The menu offers an elegant take on the great classics, while leaving room for light, daring contemporary creations. The chef imagines a cuisine of the living, clear and sincere, faithful to the Fontenille philosophy.

The chef composes according to the seasons and trusted partners: organic vegetables from neighboring farms, line-caught fish, ewe's milk cheese from the Basque hills... In the shade of the pines, the large terrace extends from the dining room. Rough wood, sleek furniture, low-angled light... An open-air setting, ideal for savoring a glass of Fontenille wine or a signature dish, your eyes lost in the reflections of the marine lake. Les fêtes au Hortensias du Lac

Au Hortensias du Lac, les fêtes se célèbrent entre océan et gourmandise, dans une atmosphère feutrée et élégante.

Les 24 et 25 décembre, le Chef Philippe Moreno signe un menu de Noël d’exception : raviole de homard, déclinaison de foie gras, Saint-Jacques snackées, suprême de poularde dorée et bûche signature Fontenille Collection.

Le 31 décembre, la Saint-Sylvestre se pare d’éclat avec un dîner gastronomique en sept temps : caviar d’Aquitaine, brouillade d’oursins, filet de Saint-Pierre au sabayon miso et filet de bœuf Rossini, le tout face au Lac marin d’Hossegor.

Le 1er janvier, le Chef revisite le menu Baïnes pour un premier déjeuner de l’année placé sous le signe du goût et de la convivialité.

Un moment suspendu, où chaque assiette reflète la finesse et la générosité des fêtes au Hortensias du Lac.

Opening hours :

  • Haute saison : du 9 juillet au 27 août, ouvert tous les soirs, fermé les mardis et mercredis midis.
  • Basse saison : de mars à fin juin puis de septembre à novembre et pendant les fêtes de fin d’année, ouvert tous les jours sauf mardi midi, mercredi toute la journée et dimanche soir.
